Recipe: Thai Fish Cakes

Ingredients

  • Green Curry Paste (found in many Asian grocers, Whole Foods, and Trader Joes): 2 tbls
  • Vegetable oil: 2 tbls
  • Coconut milk: 2 cups
  • 1 chicken breast cubed: 1 cup
  • Mushrooms diced: 1 cup
  • Optional vegetables: baby corn, egg plant, green peas
  • Fish sauce: 2 tbls
  • Brown sugar: 1 tbl
  • Green/red chilies: 2 chopped
  • Basil and lemon leaves

Directions

  1. In heated wok or sauce pan, add oil and stir fry curry paste, 1 min
  2. Add chicken and stir fry until light brown
  3. Add coconut milk and bring to boil (add pinch of salt)
  4. Add mushrooms (and other vegetables), fish sauce, brown sugar, lemon leaves, and chilies
  5. Stir a few times and then remove from heat
  6. Let cool, and then form into patties.
  7. Add basil leaves on top as nice garnish
  8. Serve with rice.
