Recipe: Thai Fish CakesIngredients - Green
Curry Paste (found in many Asian grocers, Whole Foods, and Trader Joes): 2 tbls
- Vegetable
oil: 2 tbls
- Coconut milk: 2 cups
- 1 chicken breast cubed: 1 cup
- Mushrooms
diced: 1 cup
- Optional vegetables: baby corn, egg plant, green peas
- Fish
sauce: 2 tbls
- Brown sugar: 1 tbl
- Green/red chilies: 2 chopped
- Basil
and lemon leaves
Directions - In heated
wok or sauce pan, add oil and stir fry curry paste, 1 min
- Add chicken
and stir fry until light brown
- Add coconut milk and bring to boil (add
pinch of salt)
- Add mushrooms (and other vegetables), fish sauce, brown
sugar, lemon leaves, and chilies
- Stir a few times and then remove from
heat
- Let cool, and then form into patties.
- Add basil leaves on
top as nice garnish
- Serve with rice.
