Recipe: Over-baked breaded chicken This
is a very tasty dish I stumbled upon when trying to figure out what to do with
some chicken breasts and leftover pesto. Ingredients -
2 to 3 tablespoons prepared pesto (use 1/2 the recipe
and don't include cheese)
- 4 chicken breast halves
- 1 cup panko
bread crumbs
- 1/2 cup fine dry bread crumbs
- 2 teaspoons paprika
* 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
Preparation
- Heat oven to 400°. Lightly grease a baking pan large enough to
hold the chicken in a single layer.
- Wash chicken breasts and pat dry.
Gently pound the chicken between sheets of plastic wrap to even thickness.
- In
a food processor, pulse the panko and dry bread crumbs with the paprika, salt,
and pepper, until well combined. Rub each chicken breast with about 1 to 2 teaspoons
of pesto, then press in the crumbs to thoroughly coat. Arrange the chicken in
the baking pan and bake for about 20 minutes, or until chicken is cooked through.
Serves 4.
