Recipe: Fried RiceThis
is not your run-of-the-mill fried rice. It's not doused in soy sauce, and it doesn't
have so many veggies that you can't even taste the rice. Fried rice is a simple
dish that is loved by the emperor as much as the peasants. Simple and tasty.Ingredients - leftover
bol gol gi meat, sliced into thin strips (same size for even cooking)
- day-old
rice (you can't make fried rice with freshly-cooked rice)
- 1 scallion
- 1
beaten egg
- 1 clove garlic
- ginger slices
- 2-3 tbsp Peanut
oil (or canola, but please, not olive)
- soy sauce
- bell peppers
or carrots (optional) cut into thin strips about 1-2 inches long (same size for
even cooking)
- 1 tbsp Asian chili sauce (optional; no, salsa is not the
same thing!)

Preparation - In
a wok, heat oil (2-3 tablespoons) until it smokes.
- Add ginger, scallion
rounds, and garlic. Be careful not to burn them and stir fry for 10-20 seconds.
- If
you're adding veggies (red peppers, carrots), cook until crisp (about a minute)
and set aside.
- Cook egg. Basically scramble it. Set aside.
- Add
your rice and toss and coat with oil. Add your meat, egg, and veggies, and a little
soy sauce (about a tablespoon if the meal is for 4). Stir some more to make sure
soy sauce is will mixed.
