Recipe: Crab cakes and greens
Crab cakes and greens is a simple dinner that Blythe and I like to make a couple
times a month. Not only because it's easy, but tasty as well. Impress your SO
when he/she comes home from work! Ohh la la (just remember to turn on the kitchen
fan or else everything will smell crabby!). Ingredients
- Package
of seasoned crab cakes (Trader Joes, Issacson & Stein Fish at Fulton and Halsted)
- Collard
greens (Trader Joes, Stanley's Fruit Market at North and Ashland)
- 2 tablespoons
olive oil
- 1 clove chopped or minced garlic
- 1/2 cup chicken stock
Greens
- Heat 1 tablespoon of olive oil on medium heat.
- Add 1 clove minced
garlic and stir.
- Add collard greens (1/2 bag of Trader Joes®
seems to be fine for one meal). Don't worry about how much green there is. It
will shrink considerably.
- Stir the greens making sure not to burn them.
- After most of the greens have wilted down, add 1/2 cup chicken stock
. If you need more greens, just toss them in.
- Cover and let simmer while
you make your crab cakes.
Crab cakes - Turn fan on.
- Heat
1 tablespoon of olive oil on medium heat.
- Add crab cakes. Each crab cake
takes about 6 minutes to cook per side.
