Recipe: Crab cakes and greens

Crab cakes and greens is a simple dinner that Blythe and I like to make a couple times a month. Not only because it's easy, but tasty as well. Impress your SO when he/she comes home from work! Ohh la la (just remember to turn on the kitchen fan or else everything will smell crabby!).

Ingredients

  • Package of seasoned crab cakes (Trader Joes, Issacson & Stein Fish at Fulton and Halsted)
  • Collard greens (Trader Joes, Stanley's Fruit Market at North and Ashland)
  • 2 tablespoons olive oil
  • 1 clove chopped or minced garlic
  • 1/2 cup chicken stock

Greens

  1. Heat 1 tablespoon of olive oil on medium heat.
  2. Add 1 clove minced garlic and stir.
  3. Add collard greens (1/2 bag of Trader Joes® seems to be fine for one meal). Don't worry about how much green there is. It will shrink considerably.
  4. Stir the greens making sure not to burn them.
  5. After most of the greens have wilted down, add 1/2 cup chicken stock . If you need more greens, just toss them in.
  6. Cover and let simmer while you make your crab cakes.

Crab cakes

  1. Turn fan on.
  2. Heat 1 tablespoon of olive oil on medium heat.
  3. Add crab cakes. Each crab cake takes about 6 minutes to cook per side.
